COOKBOOK FROM 21ST CENTURY C.A.R.E. RAISES FUNDS FOR CANCER PATIENTS

Fundraising Cookbook

What do you get when cancer patients and their families from across the country compile their most beloved recipes? You get a cookbook that is chock-full of goodness and love.

Last summer, 21st Century C.A.R.E. started soliciting recipes from patients, employees, physicians and board members in an effort to create a cookbook as a fundraising component to its cause. What resulted is “Caring Recipes for the 21st Century,” a hardbound three-ring binder boasting 386 recipes.

To give the project an added zeal, 21st Century C.A.R.E. also reached out to local civic leaders and businesses as well as to the famous Food Network Television Channel. This effort resulted in recipes from Fort Myers, FL’s FOX Channel 4 and WINK Channel 5, the culinary team at Bay Colony Golf Club in Naples, FL, and Fort Myers businesses Flying Pig Catering and Glow Skin Care, but the icing on the cake was obtaining a recipe from a former Food Network chef whose name and recipe remains secret except to those fortunate enough to obtain one of 3,000 available copies of the cookbook.

Here is a sampling of our delicious recipes:

CARROT SOUFFLÉ BY JOYCE

Vicki Zellner & Joyce Levy

Blend together all ingredients. Pour into greased 1 ½ quart dish. Top with topping and bake in 350o oven for 45 minutes to 1 hours. Serves 8 – 10.

SOL’S WALDORF TUNA SALAD

Solomon Agin

Combine celery, apples, nuts and tuna fish in large bowl. Mix French dressing, lemon juice, Tabasco sauce and mayonnaise. Add to other combination. Toss gently. Serve on lettuce cup, garnished with sliced cucumbers, celery sticks and cherry tomatoes. Serves 6.

COCA-COLA BRISKET

Cindy Salata

Brush meat with oil on all sides. Sprinkle with seasonings. Place meat in large roaster. Add onions and celery. Mix ketchup with hot water and onion soup mix, stir, add cola, stir again. Pour over meat. Cover and bake at 350 o for 3 ½ hours, basting every ½ hour.
